Research progress on the biological activity and homeostatic technology of sulforaphene

为了促进莱菔素的基础研究和综合开发利用,本文综述了莱菔素的生物活性,并对其稳态化技术进行总结.莱菔素化学名称4-甲基亚磺酰基-3-丁烯基异硫氰酸酯,是由黑芥子酶酶解硫代葡萄糖苷类化合物生成的产物.莱菔素具有抑菌、抗氧化、抗癌、抗突变等多种生物活性.虽然莱菔素具有很高的应用潜力和市场前景,但是稳定性较差,易受环境因素影响,因此限制了其在食品及医药领域的广泛应用.研究发现,在莱菔素的保存及加工过程中,可以通过降低内部含水量或是将其包埋来提高莱菔素的稳定性.本文为莱菔素功能性产品开发提供参考.

In order to promote the basic research and comprehensive development and utilization of sulforaphene,this article reviewed the biological activity of sulforaphene and summarized its homeostatic technology.Sulforaphene,chemical name 4-methylsulfinyl-3-butenyl isothiocyanate,is a product produced by the enzymatic hydrolysis of glucosinolates by myrosinase.Sulforaphene has a variety of biological activities such as bacteriostatic,antioxidant,anticancer,anti-mutation and so on.Although sulforaphene has high application potential and market prospects,it has poor stability and is easily affected by environmental factors,which limits its wide application in food and pharmaceutical fields.Research had found that during the preservation and processing of sulforaphene,its stability could be improved by reducing the internal water content or embedding it.Therefore,this paper provides a reference for the development of functional products of sulforaphene.
