为摆脱食品接触材料的抑菌性能测试中传统方法操作步骤繁琐、检验周期长等问题,用棉质纤维和明胶制备采集试纸片、用 2,3,5-三苯基四氮唑和平板计数琼脂制备显色培养基,将自制的采集试纸片和显色培养基引入食品接触材料的抑菌性能测试,进而构建菌落显色方法,比较分析菌落显色方法与传统方法菌落计数结果的差异.结果表明,对于食品接触材料的抑菌性能测试,本研究建立的菌落显色方法与传统方法抑菌性能测试的结果无统计学意义上的差别,二者具有相同的代表性和准确性,且菌落显色方法的操作步骤简单,没有繁琐的菌种洗脱过程,检验周期短,且可以批量化操作,因此,菌落比色法可以取代传统检测方法,在各个检测实验室对食品接触材料的抗菌性能进行监督和评价.

A new method of bacterial testing in food-contact material was developed to overcome the problems of complex operation steps and long inspection cycles in traditional test methods.Cotton fibers and gelatin-based collection paper for sample collecting were prepared.The colorimetric media was prepared by 2,3,5-triphenyltetrazolium chloride and plate count agar.Home-made collection test strips and colorimetric culture media were introduced into the antibacterial performance testing of food contact materials,and a colony colorimetric method was constructed to compare and analyze the differences in colony counting results between the new colony colorimetric method and traditional methods.The results showed no statistically significant difference between the new colony colorimetric method and the traditional method for testing the antibacterial performance of food contact materials,and both methods had same representation and accuracy.However,the operation steps of the new colony colorimetric method were simple,with a short testing cycle due to no bacterial washing procedures and could be operated in batches.Therefore,the colony colorimetric method can replace the traditional method in various testing laboratories for supervision and evaluation of antibacterial performance of food-contact materials.
