Research progress on the application of β-ionone as a food spice

摘 要:β-紫罗兰酮是一种具有紫罗兰花香的天然香料,存在于各种花卉、水果和蔬菜中,且被证明不会对人体产生危害,已作为一种具有很高商业价值的香料被应用于化妆品和护肤品等领域.目前的研究表明,除芳香特性外,β-紫罗兰酮还具有抑菌防腐、增强食品感官与提高动物生产量等作用,在食品工业与动物生产中充当着重要角色,p-紫罗兰酮的抗癌与抗炎等多种生物活性,对医疗领域也具有重要意义.本文综述了β-紫罗兰酮的基本性质、合成、安全性评价、在多种生产中的应用与药代动力学,以期为β-紫罗兰酮在食品工业、动物养殖和生物学领域中的开发及应用提供科学依据.

β-lonone is a natural fragrance with a violet flower scent,commonly found in various flowers,fruits,and vegetables.It has been proven to be safe for human body and has been extensively used in cosmetics and skincare products due to its high commercial value.Current research indicates that aside from its aromatic properties,β-Ionone also possesses antibacterial and preservative effects,enhances food sensory characteristics,and improves animal productivity.It plays a crucial role in the food industry and animal production.Moreover,β-ionone exhibits diverse biological activities,including anti-cancer and anti-inflammatory effects,making it valuable in the medical field.This article reviewed the basic properties,synthesis,safety assessment,applications,and pharmacokinetics ofβ-ionone across different sectors,aiming to provide a scientific foundation for its further development and application in food technology,animal husbandry,and biomedical research.
