不同产地血糯米的营养成分分析OA北大核心CSCDCSTPCD
Analysis of Nutritional Components of Red Glutinous Rice from Different Areas of China
对常熟、徐州、大丰、怀安、上海、河南的血糯米中水分、蛋白质、脂肪、总糖、灰分和VB2的含量进行测定分析;采用原子火焰法,测定了血糯米中钠、镁、铜、锌、钙、铁、锰6种矿物质元素含量;并采用液相色谱法测定不同产地血糯米中17种常见氨基酸的含量。结果表明:6种血糯米中的蛋白质、脂肪、灰分、VB2的含量均高于普通稻米;8种必需氨基酸中Val、Leu、Met、Sys、Thr和Lys含量比粳米高;矿物质元素Mg、Zn、Mn、Fe和Cu含量均比普通稻米要高,特…查看全部>>
